Brewster’s Fine Food and Dining: Outstanding service and great

Brewster’s is celebrating the first anniversary at their new location
on Portage Road, the site of the old Bill Knapps. General manager Shawn
Gallahger, owners Brad Wilcox and Jeff Geiger, are committed to the old
school way of operating a restaurant while embracing new innovations
in customer service, staff dedication and motivation. Shawn brings thirty-three
years experience in the dining industry, which is clearly evident by
his out-front, hands-on, personable management style. Customers are delighted
by his interaction with staff and pleasantly surprised by his tableside
manner.
You may remember Mr. Gallagher from his time at the Final Curtain from
1982 – 1992, where he ran a successful and well-known Kalamazoo
hotspot. At Brewster’s his daily line-ups, are known as “prep-rallies”,
a catch phrase that he and kitchen manager, James Crocker, use to describe
the waitstaff’s customer service goals for the day, a philosophy
used in all four Brewster’s locations that ensures outstanding,
friendly and cheerful patron driven service. The waitstaff or “Brewster
Buddies” are extremely dedicated. Julie, ten years behind the bar,
says, “Customer relationships are fun. Watching what you do really
matters in serving the community; it really means something.” Old-timer
88-year-old Nicholas remembers telling Julie when she first started that
she wouldn’t last six months and is delighted that he has been
proven wrong! Julie says that she “knows full well that smiles
and charm are important but showing that you really care about someone
is what really goes a long way. We all go the extra yard to exceed expectations
each and every day.” Michelle, another ten-year veteran and a senior
waitress says, “It’s not just a job; it’s a second
home.”
Daily
features and signature foods include prime rib, fresh roasted daily
and served all day, Norwegian salmon, swordfish and walleye, over one
hundred pounds
of wings served for Monday night football, and your choice of single or double
stacked nachos. Geiger’s renowned Titan burger is definitely not for
the light eater and is easily described as a unique Brewster adventure. Daily
features include the Steak and Lobster special on Monday and the Tuesday 2-for-1
Appetizer Special. Karaoke Night, a classic favorite, starts Friday night at
10 p.m., and Sunday is time for the Make-your-Own Bloody Mary Bar and All-You-Can-Eat
Fish Fry from Noon – 9:00 pm. There are also 24 different bottled beers
and mixed drinks, both domestic and imported to choose from, 16 different drafts
and an extensive wine list as well. Brewster’s also rewards customer
loyalty with the innovative Royalty Rewards program where for every dollar
spent, points are earned toward free loyalty certificates that can be used
on future visits.
Owners Wilcox and Geiger share a common vision of expanding to multiple
locations while keeping their service philosophy consistent, regardless
of the new venues. On the Red Arrow corridor, their new restaurant is
located in the historic 100-year-old Dyckman Hotel in Paw Paw, where
pictures of past visitors Kennedy, Capone and Joe Louis hang on the walls
giving the location an ambiance steeped in a rich historical tradition.
The restaurant in Paw Paw boasts split sections, including non-smoking
dining and a smoking bar, plus a request-driven, top 40 D.J. Thursday
and Saturday and live rockin’ dance music Friday nights. Brewster’s
Paw Paw at M-40 and Red Arrow Highway is a unique treat that must be
experienced firsthand!
With the visionaries at work once again, Brewster’s Junction in
Three Rivers has a log cabin look with a gas fireplace, a large enclosed
patio overlooking the river, and a paver brick floor. Windows along the
waterfront and a choice of booth or table seating further enhance the
natural woodsy setting. Diners will love the northern lodge feel while
enjoying great food and service in this fantastic location.
Not to be outdone, Cowboy-Up and Brewster’s Smokehouse will be
opening this fall at the former Old Duke Steakhouse in Mendon and will
be the home of great line dancing on a 3000 square foot floor in an 8000
square foot facility!
